In\u00a0the jargon of Provence, the name &#8220;Bouillabaisse&#8221; is a contraction for &#8220;bouille &#8211; abaisse&#8221;, referring to the the way the recipe is prepared: reach the boiling point (faire &#8220;bouillir&#8221;) and then\u00a0immediately lower the temperature (&#8220;abaisser&#8221;) to continue cooking.<\/p>\n<p>Today, as a real regional specialty,\u00a0the Bouillabaisse\u00a0has become one of the most famous and enjoyed\u00a0meals of Mediterranean cuisine.
